Maurizio works in the backroom of his lab and, between dark and milk chocolate, smiles and expertly srats making eggs and chicks for Easter. He speaks of temperature, color, cooling…. then from the fridge he takes a heart with written…… I love you. Maurizio Proietti inherited the art of chocolate making from his father, that had learned it from a famous piemontese chocolatier. Experience in the art of chocolate is life lasting for him, even now that the liason with is father is finished. From 1995 infact, he works with Sylvie Maingre at the chocolate den.
